Recently, I sent an e-mail to my Dear Ones with a picture of muffins as an attachment. The response leaned very much towards the positive, so I have decided to post it here for all the Internet to see as well.
Recipe follows….
OATMEAL DATE NUT MUFFINS
pre-Heat oven to 400o
Grease muffin tin, bottoms only (I usually do about halfway up the sides though)
1 large Egg
3/4 cup Milk
1/2 cup Oil
1 cup chopped Dates
1/3 cup white Sugar
1 cup all-purpose Flour
1 cup quick Oats
1/2 teaspoon cinnamon
3 teaspoons Baking Powder
1 teaspoon Salt
1/2 cup chopped walnuts
In mixing bowl, beat the egg. Add milk, oil, dates, and sugar.
In separate bowl, stir together flour, oats, cinnamon, baking powder, salt, and nuts.
Pour dry ingredients into wet ingredients
Stir together with a spoon just until moistened. Batter will be a bit lumpy, but do not overmix.
Fill muffin cups about 3/4 full
Bake until golden brown, or the testerpick comes out clean
about 20 minutes
Place muffin tin on cooling rack for about 5 minutes, then carefully remove muffins from the pan and finish cooling them directly on the rack.
